chore: bump version to 0.2.0 and update manifest

- Bump version to 0.2.0 in pyproject.toml and manifest.json
- Switch server.type from "python" to "uv" in manifest
- Remove leading "./" from entry_point
- Add UV_NO_SYNC and user-configurable env vars to mcp_config
- Add user_config section for device, connection, and screenshot_quantized
